All Sugars Are Not Created Equal

I love sweetened condensed milk. That milky sweetness reminds me of babies and childhood and homey desserts like egg custard and rice pudding. The thing about store-bought sweetened condensed milk is that it doesn’t have a lot of flavor beyond milky sweetness. The refined sugar used to make sweetened condensed milk is sweet, sure, but that’s all it is. There is no depth or nuance to the sweetness of refined white sugar.

Coconut palm sugar, on the other hand, is full of caramelly good flavor right out of the container. I’m sure you can imagine how much deeper the flavor becomes when it’s mixed with milk and then reduced on the stove top by 60%! What you end up with is a thick and deeply caramelized milk and palm sugar mixture that is much thicker than store-bought sweetened condensed milk. Expect something with the thickness of dulce de leche. As thick as it is, homemade organic sweetened condensed milk works in no-churn ice cream just as well regular sweetened condensed milk. I know–I made some ice cream with it, and it works perfectly!

Unrefined Sugar Lends More Flavor

Not only will you be able to make ice cream with more depth of flavor, you can feel good knowing that you’re using an organic product that you made yourself, that only contains 2 ingredients and contains no added refined sugar at all.

I’m not saying this is diet food. I’m sure homemade organic sweetened condensed milk contains every bit as many calories as store-bought. At least they are organic and unrefined calories! Even if you are not concerned about consuming refined sugar, this SCM has so much flavor that you will want to use it in all the no-churn ice cream you make. I am definitely using it as a base for the next chocolate no churn chocolate ice cream I make, because there is nothing better than chocolate ice cream made with a caramel base.

Expect an ice cream recipe made with my homemade organic sweetened condensed milk tomorrow, but for now, here’s the recipe for making the SCM. You will want to spoon it on ice cream, use it in ice cream, serve it with fruit, sweeten your coffee with it, and use it as a cake filling! So many uses!

Homemade Organic Sweetened Condensed Milk (2 Ingredient, No Refined Sugar)

All measurements are by weight. Here is an affiliate link to the scale I own and love. Whether or not you decide to make your own sweetened condensed milk, I encourage you to purchase a kitchen scale.

Homemade Organic Sweetened Condensed Milk (No Refined Sugar)

Homemade organic sweetened condensed milk is easy to make, takes only 2 ingredients (and time) to make, and contains no refined sugar. It's deeply caramelized flavor is a delicious bonus!

Ingredients

  • 32 oz organic whole milk, (sub full fat organic coconut milk to make a fantastic vegan sweetened condensed milk)
  • 6 oz organic coconut palm sugar

Instructions

  1. Combine the milk and palm sugar in a heavy-bottomed sauce pan.
  2. Bring to a boil over medium heat, stirring occasionally. Be careful it doesn't boil over.
  3. Adjust heat to medium low to keep the milk at a very low boil/high simmer.
  4. Reduce by 60% by weight. Your final weight of your mixture should be 15.2oz. (See Notes)

Notes

You can scale this recipe up or down, keeping the ratio of 1 oz palm sugar to 5.3 oz milk. Base as written is 32 oz milk to 6 oz palm sugar.


Occasionally pour/scrape the simmering milk mixture into a heat proof container on a scale you've zeroed out. You're looking for the final weight of the sweetened condensed milk to be 40% of the original weight, or 15.2 oz.


If you're going to use this as an ice cream sauce or in your coffee, you can certainly stop the reduction at any point once the sweetened condensed milk has thickened up some. If you're going to use it to make no-churn ice cream, go ahead and reduce it all the way. If you leave too much water in the mixture, your ice cream will set up too firmly and could possibly develop an icy texture.
